If you like food and fun, then a new restaurant might be the place for you.
Endless Pastabilities, which plans to open this month, will feature “fun” foods according to owners Richard and April Fitzgerald, like a giant meatball and tic-tac-toe focaccia bread.
“We always look for that place that you can go that’s fun to eat at, and has entertainment, but that’s lacking in the area,” said Richard, who brings management experience from his previous job at Maverik. “There’s nothing like that around, so right after we got married, we said, ‘Maybe we should open our own restaurant.’”
At first it was a joke, but they repeated the joke enough that they started to talk seriously about starting their own restaurant.
They started looking at spaces, and the space they finally settled on was one that had recently come open, at 1544 Oxbow Dr., Suite 198.
“We got lucky we found this spot,” Richard said.
But it’s taken quite a bit of remodeling to get the restaurant space to look the way they want it.
Previously an open concept space, the Fitzgeralds have installed 4- and 6-foot walls throughout the space to give the feel of eating at a classic Italian restaurant.
They’ve also installed a performance stage, which they hope local musicians will be eager to utilize.
They also want to welcome people to open mic nights and provide some interactive experiences with the entertainment, like karaoke nights.
They want to be a fun gathering place for families and people of all ages.
They said a feel of rustic Italy is the vibe they’re hoping to achieve. They plan to put Italian decor about the walls, and the menu is classic Italian, as well.
“It’s primarily going to be pizza, pasta, soup, salad, sandwiches and then desserts and an assortment of Italian wines and cocktails,” Richard said. “We always like soup, and a lot of places you go, they don’t have the soup made. We want to make sure that when you order the soup, we have the soup there and made.”
Their focaccia bread and pizza dough will be made in house, they said.
April brings a background in management, as well, and they hope to foster a good working environment for their employees.
“We hired a chef that wants to teach people how to better themselves,” Richard said. “My chef and myself and my wife, we would love to be able to push people and inspire them to achieve what they want to achieve.”
