<\/a><\/div>\n\n\n\nBrian Beltran has revived Menudos, the burrito and tamale operation he first opened in 2011, now serving food out of the Mexican American Development Association (MADA) kitchen in Montrose at 17. N 6th St.<\/p>\n\n\n\n
Beltran said the new venture is only a few weeks old, but many customers already recognize the name.<\/p>\n\n\n\n
\u201cThis is our fourth weekend,\u201d Beltran said this past Saturday. \u201cA whole lot of happy people about that.\u201d<\/p>\n\n\n\n
The original Menudo\u2019s operated for several years in the space now occupied by Alpenglow Confections at 110 N. Townsend Ave. Beltran said the restaurant built a loyal following before health problems forced him to close the business.<\/p>\n\n\n\n
\u201cWe opened in 2011,\u201d he said. \u201cI had some health problems, so things went south and we had to let it go.\u201d<\/p>\n\n\n\n
After leaving the restaurant business, Beltran worked at Culver\u2019s for about five years before being laid off last October. That moment, he said, pushed him to start cooking again.<\/p>\n\n\n\n
\u201cI was like, OK, now it\u2019s time to change,\u201d Beltran said. \u201cI got to do something new now.\u201d<\/p>\n\n\n\n
For Beltran, the decision also came from something he said he missed deeply \u2014 the reaction from customers when they tried his food.<\/p>\n\n\n\n
\u201cOne of the biggest enjoyments about doing this is just the reaction of people when they eat our food,\u201d he said. \u201cThe happiness \u2014 they\u2019re just like, \u2018Wow, this is\u2026\u2019 It\u2019s an awesome feeling to see that and give that to people.\u201d<\/p>\n\n\n\n
Beltran said former customers often told him they wanted his food to return.<\/p>\n\n\n\n
\u201cPeople kept telling me, \u2018Hey man, we need you back. We need your burritos back,\u2019\u201d he said. \u201cYou got burritos all over town, but your burritos aren\u2019t like anybody else\u2019s in town.\u201d<\/p>\n\n\n\n
That desire to stand out is something Beltran said he still focuses on.<\/p>\n\n\n\n
\u201cThat\u2019s where we like to be \u2014 stand out,\u201d he said. \u201cWe don\u2019t want to be like everybody else. We want to be different.\u201d<\/p>\n\n\n\n
The menu currently includes burritos with bacon, steak, sausage or chorizo, as well as egg and cheese options. Customers can also order Beltran\u2019s homemade tamales.<\/p>\n\n\n\n
The business\u2019 slogan, \u201cMake Mine a Fatty,\u201d comes from Beltran\u2019s earlier years cooking in Denver. <\/p>\n\n\n\n
Beltran said he learned the trade working for Gomez Burritos, a chain with several locations.<\/p>\n\n\n\n
\u201cWhen I worked for Gomez, people would come in and say, \u2018Hey, hook it up. Make it a fatty,\u2019\u201d Beltran said. \u201cEverybody would say, \u2018Make it a fatty burrito. We\u2019re hungry.\u2019 So we ran with it.\u201d<\/p>\n\n\n\n
The phrase stuck and now appears as a motto for the business\u2019 oversized burritos (they come in regular and fatty style). <\/p>\n\n\n\nBeltran is currently operating on a small scale \u2014 open limited hours and producing smaller batches of food to avoid waste.<\/p>\n\n\n\n
\u201cWe\u2019re only open six hours and we\u2019re only open two days,\u201d he said. \u201cI\u2019m not trying to keep a whole lot of stock in house because I\u2019ll be throwing a lot of food away.\u201d<\/p>\n\n\n\n
Despite the limited hours, Beltran said demand has already been strong. Many customers from the original restaurant have returned, along with new diners who discovered the stand through social media.<\/p>\n\n\n\n
\u201cA lot of people from back in the day,\u201d he said. \u201cAnd a lot of new people. They see us on Facebook.\u201d<\/p>\n\n\n\n
Beltran is also exploring ways to expand. He said he plans to launch a tamale cart that could serve multiple varieties, including sweet options like pineapple.<\/p>\n\n\n\n
He is also working to package and label burritos for wholesale distribution. Beltran said Blair\u2019s Truck Stop has already expressed interest in selling them.<\/p>\n\n\n\n
\u201cThey want two or three dozen burritos over there as soon as I get the labels to put on them,\u201d he said.<\/p>\n\n\n\n
For now, Beltran said the focus is simple: cooking good food and reconnecting with the community.<\/p>\n\n\n\n
Dennis Martin, who works with Beltran and previously worked alongside him at Culver\u2019s, said the operation has quickly found a following.<\/p>\n\n\n\n
Customers have also stepped in to help. Montrose resident Monique Olson said she recently volunteered to assist Beltran with food preparation.<\/p>\n\n\n\n
\u201cI started talking to them,\u201d Olson said. \u201cI was lending a hand to help them mix up tamales last night and he\u2019s been paying me with food, which makes me happy.\u201d<\/p>\n\n\n\nBeltran said those kinds of connections are part of what makes the work worthwhile.<\/p>\n\n\n\n
When new customers take their first bite, he said, he still looks for the same reaction he did years ago.<\/p>\n\n\n\n
\u201cDon\u2019t stare at them,\u201d he said, recalling advice he once gave kitchen staff. \u201cJust glance over when they take that first bite of their food.\u201d<\/p>\n\n\n\n
\u201cThat\u2019s when you see it.\u201d<\/p>\n\n\n\n
